Veggie-Loaded Egg & Feta Skillet

Serves: 2

Ingredients

  • 1 tbsp olive oil
  • ½ cup sliced mushrooms
  • ½ cup chopped spinach
  • ¼ cup diced tomatoes
  • 2 tbsp chopped onion
  • 4 large eggs
  • 2 tbsp crumbled feta
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté mushrooms and onion for 3–4 minutes.
  3. Add spinach and tomatoes; cook until wilted.
  4. Crack eggs into a pan and gently stir.
  5. Cook until eggs are just set.
  6. Sprinkle feta on top and remove from heat.

Serve With (25% carbs):

  • 1 slice whole-grain toast or
  • ½ cup roasted sweet potato cubes
