Mediterranean Chicken Veg Bowl

Ingredients

  • 2 small chicken breasts (about 6 oz / 170 g total)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Juice of ½ lemon
  • Salt & pepper

Vegetables

  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes
  • ½ cup sliced bell peppers
  • 2 cups mixed greens

Carbs

  • 1 cup cooked quinoa (½ cup per serving)

Instructions

  1. Season chicken with olive oil, oregano, lemon, salt, and pepper.
  2. Grill or pan-cook until cooked through (about 6–7 min per side).
  3. Slice chicken.
  4. Divide vegetables into two bowls.
  5. Add quinoa, then chicken on top.
  6. Drizzle lightly with olive oil and lemon if desired.
