Ingredients
- 1 tbsp olive oil
- ½ cup sliced mushrooms
- ½ cup chopped spinach
- ¼ cup diced tomatoes
- 2 tbsp chopped onion
- 4 large eggs
- 2 tbsp crumbled feta
- Salt & pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté mushrooms and onion for 3–4 minutes.
- Add spinach and tomatoes; cook until wilted.
- Crack eggs into a pan and gently stir.
- Cook until eggs are just set.
- Sprinkle feta on top and remove from heat.

- 1 slice whole-grain toast or
- ½ cup roasted sweet potato cubes
