🛒 Ingredients (Serves 4)
Base:
1 cup almond flour
2 tbsp melted butter
1 tbsp powdered erythritol or stevia blend
Pinch of cinnamon (optional)
Filling:
1 cup cream cheese (softened)
½ cup plain Greek yogurt
2–3 tbsp erythritol or monk fruit sweetener (to taste)
Juice + zest of 1 lemon
1 tsp vanilla extract
Topping:
Fresh berries (strawberries, raspberries, blueberries)
👩🍳 Instructions
Make the base:
Mix almond flour, melted butter, sweetener, and cinnamon. Press into the bottom of small cups or jars.
Make the filling:
Beat cream cheese until smooth. Add yogurt, sweetener, lemon juice/zest, and vanilla. Mix until creamy.
Assemble:
Spoon filling over the base and smooth the top.
Chill:
Refrigerate for at least 1–2 hours (or overnight if you can wait).
Top & serve:
Add fresh berries right before serving
